My week dashboard is similar to this, but in a horizontal format.

So your chart would look like this:

Sometimes I will put tasks under the project and assign them days of the week, like this:

Then I can see how the project can be accomplished over the week in small bites instead of one overwhelming goal. With each project broken down like this, I can see what each day's small bites are and make sure that I can schedule them in.
