New slow cookers are supposed to reach these temperatures for just that reason. But older models do not reach high enough temperatures to denature the lectins in red kidney beans. Experts advise you not to use grandma's crock pot. If you have any doubt, boil kidney beans for ten minutes before putting them in the slow cooker.
